The cellar The vinification is made in a modern high-tech cellar, with monitoring systems for the insulated and thermo-controlled stainless steel vats. Timing plays an important role in the just hand-harvested grapes, in order to leave their aromatic potential unaltered and avoid a consequent standardization of the resulting wine. Fermentation and vinification are monitored continuously, and an extremely meticulous attention is devoted to cleanliness. |
